TOMATO-CORN SOUP

January and February are the months that a good bowl of soup warms more than just the body. The following recipe is one of my winter favorites. It is very easy to make. The “secret” is the seasonings. The quantities are not a misprint, you really do use the amounts called for. If you follow the recipe, you will truly enjoy a good bowl of soup.
JALAPENO POPPER SOUP

Wintertime can get me down. The cold days, brown grass, dead trees, and grey skies just seem to zap me. I usually want comfort food when I’m feeling that way. (bring on the Mac and Cheese) , but I am trying to eat healthier. This recipe may be higher in fats but it’s low in carbs, so it’s a healthier option. Besides, it’s yummy comfort food.
